How about a combination of a Fangtooth Moray Eel, Stonefish, and Pufferfish?
It could have the length and teeth of the eel, the camouflage and venom of the stonefish, and the ability to inflate itself like a pufferfish.
When threatened, it could rapidly expand, making it more challenging for predators to swallow or attack effectively.
This inflation could also be accompanied by the release of toxins from specialized glands, enhancing its defense.
The combination of these features would create a highly adaptable and dangerous creature.
It could lurk on the ocean floor, camouflaged and waiting for prey.
If threatened, it could rapidly inflate, simultaneously releasing venomous toxins and revealing its Fangtooth-like teeth.
Adventurers would have to watch out for this one when doing sea exploration.
The result might be something like this weirdly disturbing AI-generated, Beholder-like fish
Something like a magically animated, hovering carpet or a fast moving golem would be cool.
I never liked the dependency on other living beings.
Makes me feel inferior.

Water Mounts
My favorite animal are horses and i hope there will be size diversity among them From large breed horses
with big hooves and hair around the horse's feet, to slender horse breeds like the Arabian horse.
Would also be nice to have diversity on the horses mane and tail, from super long to short.
Sence i like horses i found something intresting on google, a hybrid between a horse and a raptor. Fits well for the Animal husbandry. :P
