A person comes across a rare harvestable and they don't have the proper skill level... They attempt to harvest the item... The item is destroyed and is now no longer able to be harvested by someone with the proper skill level.

Or when you see a piece of diamond in the rock. Getting it out without breaking it into smaller pieces might require more care/time from the less skilled harvester.
