There is taming (part of hunting profession) and animal husbandry yes!

You can go and tame your mounts and combat pets and breed them to be better.

I really recommend looking up the Animal Husbandry system on the wiki, too. There's a fair amount of detail about what the breeding system is going to look like, including that breeding animals is going to have genetic weighting, that you'll be able to cross-breed a variety of animals, and that there'll be special mutant animals you can find in the world and breed for the best results. The whole thing is one of the things I'm most excited about for the final game.
