All good concerns. My fix is that if the survey tool you use tells you that you're over-gathering and causing resource depletion in the future, and you gather anyway, if flags you for combat. I'd say that gathering is currently more work in-game if you want to be good at it. There are definitely more risks with PvP compared to the other professions.
