How about allowing players to learn any skill, but have secondary professions de-level over time when they aren't used enough?
That way everyone has in theory the ability to learn multiple professions, but in practice it becomes impossible.
Similar to how nodes go up and down over time and the same could (should?) be applied to weapon skills. You can learn all of them but you only master the one you are using the most.
Making crafting casual unfriendly is bad. Any thing minor enough to not effect them is meaningless at curtailing no lifers. The current dev proposed system /is/ the middle ground system.

In Ashes, choices are meaningful.
Possible the devs might -might- do something similar Secondary Archetype respec. But, seems unlikely.
One character being able to do everything is not a design goal, AFAIK.
