Any idea on if we are gonna see any of these or are they going to divulge that at testing?

Other than that we aren't going to get much more info on summoners until well into Alpha 2 unless Steven changes his mind like he did for combat. Possibly not even until after Alpha 2. It's slated as the last class they plan on building. (I don't have a quote on me right now sorry, this is just based on my memory from live streams past so take it with a grain of salt.)
Here is a link for a summary of all the information we have to date relative to summon appearance. https://ashesofcreation.wiki/Pets#Summoner_summons
Very curious if any ranger variants will have a pet as well.
Can you clarify what you mean on "Familiars"
There will be skins for summoner's summons that may be class specific appearance or skins offered in the cosmetic shop (down below for in-depth information )
Summoners summon different summons, depending on the class and augments they choose.[4][11]
Animals.[11]
Spirits.[11][12]
Zombies, skeletons and other undead creatures.[5][12]
Corpses (potentially).[11]
Some summoners may summon multiple things.[11]
Other summoners may only summon one powerful thing.[11]
Certain summoners may only be able to summon effects and/or temporary energies.[11]
A summon's appearance is determined by in-game choices.[15]
Class specific appearance.[15]
For example: Summoner/Rogue (Shadowmancer) may have shadow summons.
Race specific appearance.[15][16]
Summoners can change the appearance of their summons.[11]
Through in-game items.[11]
Through cosmetics that will be offered.[11]
Potentially through a summon creation suite, based on the Animal husbandry system.[17]
