Quest Design Feedback (overall)

I would be interested to hear what others think about the quest design overall, but here are some of my initial thoughts/feedback as a new player to this game. I know "it's still an alpha dude" but hopefully feedback we give devs at this stage can help shape this game better for the future.
As a person who works in the IT/Apps field IRL, I realise the importance of taking a step back from a product and looking at it from the outsider's perspective, assuming no prior knowledge of the app, to better design things more intuitively. In this regard, the game needs a lot more development before it goes into Beta.
QUESTS THAT YOU CAN'T ACTUALLY COMPLETE YET
My first impressions of the quests were frustration and annoyance, that I could not find how/where to do the quests that I have been given - only to find out later that you can't actually complete some quests until a certain level.
SANITY SUGGESTION: Players should not be given quests that they cannot do yet due to mechanical/design restrictions (eg, register for citizenship I got at level 2 and you need to be level 5 I think to do this).
QUESTS THAT YOU CAN COMPLETE, BUT ARE HIGHER LEVEL THAN YOU EXPECT
Another quest I got marked as a level 1 quest (Rain of Rocks) asked me to climb nearby ramparts and kill some rock throwing goblins. Upon getting my ass handed to me by multitudes of level 4-5 mobs I finally reached the top, only to find yet more level 4-5 mobs that I struggled to kill at al level 2. I managed to kill 1 or 2, but they gave no quest reward so I assumed these can't be the mobs I need due to the fact they are higher level and they are not giving the quest items. I then returned at level 4 to kill some more, now suddenly the quest items were sometimes dropping (I didn't realise it was a "chance" to drop).
SANITY SUGGESTION: Don't give players a quest at level 1 to kill mobs which are vastly higher level than them (and if you do this, don't confuse it even more by making it a "chance" to drop the item, as it would already be a challenge for people to kill these when offered the quest, let alone adding an RNG element to it).
QUESTS WITH VAGUE OR AMBIGUOUS OBJECTIVES
I was given another quest to turn in some crafted flower powder something, either to western workshop or an eastern farm.
I chose the western workshops as that sounded fun, so I went to where the marker on the map was saying and could not find a single NPC interested in accepting this bundle, every NPC was just offering me crafting options. I eventually went to the farm where there was an NPC awaiting my delivery, happy days.
SANITY SUGGESTION: Please add more detail in the quest log (and/or tracker) on what you should be doing for the quest, or at least give a more hints in what steps are needed for the objective.
