Hunting profession: question & suggestion

Not able to play at the moment but from watching a few streams:
Is "hunting" basically just gathering, another type of resource?
The wiki page mostly talks about taming, a sub-task of hunting, except for this:
Regardless of the mob model, running around pressing F on dopey animal resources feels a bit rubbish, no?
Suggestion:
I was hoping it'd be a little more active, involve actual hunting of prey (combat).
I'd honestly prefer it was just Hunting-specific drops from kills. Like "carcass" as the raw material or something.
These could be "processed" into a pretty broad selection of materials then, eg: skins, meat, fat, eggs, venom, ivory.. list goes on.
Used by cooking, alchemy, armor smithing, more?
Plenty of potential for Hunting-specific quests, like taking out named mobs for materials.
There's a lot of interest in taming + animal husbandry of course but personally I'm a lot more interested in the rest of Hunting, and how it aligns to combat and a nomadic lifestyle.

I've done mostly Herbalism and Mining, but also dabbled in Hunting lately. And I can confidently say that the resource distribution of the former two far exceed that of Hunting. I think AoC should just have animal carcasses be harvestable from their relevant animal counterparts after they've been defeated in combat.
- It incorporates a gameplay mechanic elegantly into preexisting core loops (PvE and exploration). You're actually hunting for real.
- Opens up the entire map with resources to be gathered, on par with the approachability of Herbalism and Mining.
- Gives Tanners a lot more quantity to work with, making it a lot less tedious to level.
They could still have named enemies or bounty targets, and give them much better rewards and exp to incentivise people. But this, to me, just seems more intuitive, to actually hunt my preys.
I was too addicted to Ark Survival Evolved I think lol but that would be an awesome mechanic that would be realistic and not really disrupt the PvP engagement because we could just switch weapon and attack others and kill the animal instead of sleeping it.
That'd be cool too.
I was referring mostly to the non-taming side of hunting, actual killing for materials.
But I think that has great potential to to extend "proper" hunting into capturing with tranqs. Maybe even applying a tracker for some purposes (helps to find a rare mob?).
As a bare minimum I just really hope normal "hunting" is actually mob loot, rather than another collectible resource.
