Looking for class suggestions for a small challenge I wanna do to level when the game releases.

Was looking to level purely off not killing anything and gaining levels off gathering and such. Will there be a Class that would be better at such things?

Ranger has Camouflage for the Mobs, and Strider that lets you move a little quicker.
Cleric has Flash Cure to heal yourself if you're being attacked while Gathering.
Summoner will have a Pet Summon to protect you while you Gather.
