CST, or UTC-6 I believe, I will mostly play alternating Fri/Sat from 7:00pm-2:00am and again Sun from 1:00pm-5:00pm. Also randomly during the week and my open Fri/Sat.
I will take a week off at the beginning of Alpha I access, will be looking for full time buddies to chill with until release during that week
While it is a wonderful sentiment, and I have no interest in telling you how to spend your free time. You realize that any major game release has server issues from day one. I have repeatedly seen people screaming on different game forums "I took the weekend off from work AND I CAN'T LOGIN!!" As long as you are able to shake it off if they release a date, you schedule vacation, and then are not able to get into game due to issues.
I don't take time off very often and have way to much ETO. I am taking an entire week off next month to see the eclipse. I only have to drive 2 hours (to my in-laws) and totality last 3 minutes at the longest I think. It might even be cloudy. But hey, I can only sell back so much so it's got to go somewhere
But I do appreciate the concern, and that's one of the reasons I enjoy this community.

Main Class: Either Direct Healing or Dps, depends on what the multiple different classes offer and what the general need is of the community in the game, my goals for the game aren't yet 100% but I do plan on moderate theorycrafting.
Timezone: PST, but I play at all times as I work 12 Hr Rotating shifts.
Cheesecake is the best desert mankind has offered me.
I think I made a positive impact on WoW within my Server, I am hoping to do the same within Ashes of Creation.

This is just about EVERY launch I've ever been a part of. I think GW2 is the only one I can recall that didn't have a melt down on launch day / night.
The absolute venom posted by the entitled masses at and soon after launch is always epic.
The plan would be not to actually schedule the time off BUT, if the launch is relatively smooth and you can actually play the game then by all means CALL IN SICK, lol.
However, due to both your feedback and Unknownsystemerror, I might try to aim for the second week of Alpha 1, I assume Alpha will be a long(er) process and I could take two weeks if I was really feeling it and the Alpha was Jan 2019.
Either way, like I said, still plenty of other games to play and things to do with free time. Never a bored moment here

My playstyle is whatever tickles me at the moment but probably PvE, Artisan, PvP and Exploration in some random order depending on the day, cycle of moon or a dice roll.
I am an altaholic but Rogues, Rangers and Tanks will fit in somewhere once again based on the day, cycle of the moon or a dice roll. With some accommodation to group or guild needs at the moment.
I am MST but it is possible to see me any time based on my sleep schedule which is more random than my playstyle or character preference.
