Just another grind fest?
Tried out the Alpha only to find out that mob grinding is the best way to level up and questing is not even worth doing. Is there any information on if they are going to change this at all? Game seems alright but I don't want to play if it's just going to be a mindless grind fest to max level bashing your head against mobs with 0 reason for questing.

There will be many opportunities to get advancement in other ways, but we aren't absolutely sure that these will be Adventuring level ('normal' exp/levels).
The idea is that you will need many other aspects to have a complete functional character, probably (at least some, probably not all) such as Social standing with particular organizations, etc.
There might be some additional quests or stuff related to adventuring level that is related to those, just like how some of the best content for 'just grinding' will be available through building up your Nodes.

I also have no idea how much they are deemphasizing quests right now to get more mechanical gameplay data from players, it of the content teams are working towards expanding the lore for incoming regions before they go back to working on the playable regions. But I'm with you on wanting to see more quests!

I don't see how the game could have the leveling speed they want to have without having grinding as a major factor.
What you just described is the very Reason that i had to quit at first with Burnout after a few Spot-Test Weekends, after my Character reached somewhat EXP above LvL 11 onwards to LvL 12.
I could have probably still done this if i would be like 22 Years old or so -> but as i approach 40 now and was also pretty alone and all my direct Friends are not even in the Alpha 2 yet or will join when the Game releases - i did the wise thing and made a Pause before i hurt my own head even further.
It is surprisingly relaxing to observe the Alpha Two from watching the available Streamers and monthly Videos from now.
I just wish the Presentations wouldn't have shifted so much since the Alpha Two has begun. I don't even care if i am "being lied to" with the SUPER-awesome looking Presentation Graphics from before.
same as for example the "higher Grass" which was waving so cool in the Wind and which the Fighter or someone else could "cut down" with Combat Moves. GOD DAMN that was so cool and awesome.

While i am 100% confident the divine Graphics and Lighting displayed in the monthly Presentations "could" most likely be brought back in a single Patch at any Point of the Alpha Two,
i just miss the awesome Presentations, you know ? Nothing would be a greater Killjoy than seeing Ashes of Creation do the exact same Shit as Witcher Three,
and first present to us what "could be" -> what "SHOULD be" -> but then flip us off while giving us a resounding slap right into the face.
I know Ashes of Creation is not a scam. I know it doesn't need to do this lying Stuff. The Computers are as far and strong developed as never before now. And lastly i don't want to get stabbed between the ribs from either the front or behind again and again "and AGAIN" with disappointment -> after i was being led to believe a VideoGame could indeed be as close to Perfection as it possibly can.
Because if Ashes wouldn't be able to of these amazing Graphics and Lighting -> while showing such insanely good Presentations from before in the first Place ? Why would someone lie and commit "under false pretenses" ?

Also, the devs have said that they don’t want Ashes to be a “theme park” MMO where you follow a golden path, but they do want meaningful questing and alternative progression to be viable. It’s just not fully implemented yet.
So yeah, the current grind heavy feel is likely temporary and mostly for testing purposes. The final game should offer a lot more variety in how you level and engage with the world.
